Ingredients
- 1 Kg Riverfrut Cherie red potatoes
- 2 red Tropea onions
- Extra virgin olive oil to taste
- Salt to taste
- Mediterranean herbs to taste
Method
Peel the potatoes, wash, dry and cut into cubes. Peel and slice the onions. Transfer everything into a bowl and add the oil, salt and dried Mediterranean herbs.
Mix well to distribute the seasoning. Place the potatoes on a baking tray lined with baking paper and bake in a preheated oven at 200 ºC for 25/30 minutes. Serve the red potatoes with piping hot baked onions.
