Ingredients
- Riverfrut and Cottintavola MAP steamed spinach
- 2 eggs
- 20 g of grated cheese
- 100 g of stale bread crumbs
- 50 g of smoked provola
- salt to taste
- breadcrumbs as desired
Method
Place the spinach in a bowl with the bread previously softened in water and squeezed out, the eggs, Grana or Parmesan cheese and salt.
Mix together thoroughly and check the consistency; add 1 – 2 tablespoons of breadcrumbs if necessary. You should obtain a soft and compact mixture.
Shape the meatballs with a spoon and place small pieces of provola cheese in the centre. Close up, and dip in the egg and then the breadcrumbs
Place the meatballs on a baking tray lined with baking paper with a little oil and bake in a static oven at 180° for about 20 minutes until golden brown.
