Spinach meatballs with a cheesy centre

An alternative recipe for making healthy and tasty vegetable meatballs. Their cheesy centres will amaze you!

  • Riverfrut and Cottintavola MAP steamed spinach
  • 2 eggs
  • 20 g of grated cheese
  • 100 g of stale bread crumbs
  • 50 g of smoked provola
  • salt to taste
  • breadcrumbs as desired


Place the spinach in a bowl with the bread previously softened in water and squeezed out, the eggs, Grana or Parmesan cheese and salt.

Mix together thoroughly and check the consistency; add 1 – 2 tablespoons of breadcrumbs if necessary. You should obtain a soft and compact mixture.

Shape the meatballs with a spoon and place small pieces of provola cheese in the centre. Close up, and dip in the egg and then the breadcrumbs

Place the meatballs on a baking tray lined with baking paper with a little oil and bake in a static oven at 180° for about 20 minutes until golden brown.
