Lasagna with a trio of grilled vegetables

A vegetarian alternative to the classic lasagna, but just as rich and tasty!

  • 120 g of pre-cooked lasagne sheets
  • Riverfrut and Cottintavola grilled vegetable trio
  • 100 g of grated Parmesan
  • 500 g of crescenza cheese
  • 80 g of basil
  • 40 g of ground almonds
  • 80 ml extra virgin olive oil
  • salt to taste


Put the basil in a glass container, add the almonds and 50 ml of oil. Blend with a stick blender and add salt to taste.

Sprinkle a baking dish with 1 tablespoon of basil oil, cover with the lasagna sheet, spread pieces of crescenza cheese, the trio of grilled vegetables, the Parmesan and the basil oil. Add two more layers, finishing with a layer of lasagne sheets.

Spread a little crescenza cheese and a sprinkling of grated Parmesan.

Bake covered for 15 minutes at 180°C. Uncover and brown under the oven grill for 5 minutes.
