A rich and tasty side dish created from one of the most classic of combinations: French beans and potatoes!

- Potatoes 400 g
- Fresh Riverfrut French beans 400 g
- Extra virgin olive oil 40 ml
- Parsley 4 sprigs
- Garlic
- White wine vinegar 20 ml
- Salt to taste
- Pepper to taste
Method
Wash the potatoes well to remove soil residues from the skin. Wash and put the potatoes in a pot with cold water and a little salt and boil for 35-40 minutes.
Drain the potatoes, cut them into fairly large pieces and set them aside in a large bowl. Cut the French beans into small pieces and add them to the potatoes.
Prepare the vinaigrette by pouring the oil, vinegar, lemon juice, salt and pepper into a glass jar. Also add the finely chopped garlic and parsley. Close the jar and shake vigorously to emulsify everything. Pour the vinaigrette over the potatoes and French beans and serve!
